Air Fryer Baby Potatoes

These golden miniature potatoes get coated in a sprinkling of seasonings, freshly grated pepper, and a touch of salt. They cook up perfectly with crisp outsides and buttery soft middles right in the air fryer and make the best side dish!

A great side dish really completes a meal. This potato recipe would be great served with Honey Garlic Marinated Chicken (a family favorite) along with some delicious Garlic Bread. Finish off the meal with this easy Pineapple Dump Cake!

We eat a lot of potatoes, so I always pick up a bag of them at the grocery store. Potatoes are so versatile and definitely a staple in our home.

This simple potato side dish is highly requested by my kiddos. I like it because it comes together with just a few pantry staples and pairs well with just about anything and any meal, breakfast, lunch, or dinner. All you need are some kitchen basics like oil, salt, pepper, dried rosemary and garlic.

What are Mini Potatoes?

Petite potatoes are harvested early in the growing season before they have reach full maturity, so they are small in size. They are also called new potatoes or baby potatoes. You can use either small golden potatoes (this is what we used in this recipe) or small red potatoes.

Why would you want to harvest the potatoes early? Well, the young potatoes actually have thinner skin than those left to “ripen” longer. This means they don’t have to be peeled, hooray for saving steps! They also end up with a sweeter and creamier flesh inside once cooked.

What goes in Baby Potatoes?

  • Potatoes: Baby gold potatoes are usually about the size of a ping pong ball. The skin can be left on because it is thin, delicate and easy to eat, just cut off any bad spots. If you have really small potatoes, you may be able to cook them whole but cooking time maybe a little longer.
  • Oil: I like using extra virgin olive oil or avocado oil on my potatoes.
  • Salt & Pepper: Of course we need salt and pepper. Freshly ground black pepper will give the best flavor and use coarse or fine salt.
  • Garlic: Dried garlic will give you the best garlic flavor without the risk of it getting burned.

How do you Make Air Fryer Mini Potatoes?

Simply scrub your potatoes, dry them, and cut them in half (you only need to quarter them if you have larger potatoes). Mix them around in a bowl with the seasonings. Pop them in a preheated air fryer and bake until perfectly browned. In the last few minutes of cooking stir the minced garlic into the potatoes. Sprinkle on chopped parsley and serve.

STEP 1: Wash the potatoes making sure to scrub them well. Dry the potatoes completely and cut them in half. Add to a large bowl.

STEP 2: Preheat the air fryer.

STEP 3: Add the cut potatoes to a bowl, drizzle on the oil and mix around until potatoes are fully coated.

STEP 4: Sprinkle on the salt, pepper, dried garlic, and dried rosemary. Mix well.

STEP 5: Add the potatoes to the hot air fryer. Cook, then open the air fryer and shake the basket. Continue cooking. Fully cooked potatoes will be easily pierced with a fork. Serve immediately.

How to make the Best Air Fried Potatoes?

First of all, you want to make sure that the potatoes are completely dry after you wash them. If they have moisture, the potatoes will steam and the skins will end up tough instead of crisp. Try to use potatoes that are similar in size so that they cook up evenly.

The potatoes are going to cook the absolute best if you keep them in a single layer in the air fryer, it’s okay if they touch just don’t have them over lap or piled on top of each other.

Once those bad boys are cooked, you want to serve them up immediately. If the cooked potatoes sit around for too long, they will continue to cook and end up with gummy insides.

What are some Recipe Variations?

  • To make cheesy potatoes: Shred about 1/4 cup from a block of parmesan cheese and add into the oil and seasoning mixture. You could also use mozzarella or cheddar cheese.
  • Use other potatoes such as baby red potatoes or fingerlings.
  • Add your favorite fresh herbs like dill, basil, rosemary, or thyme to the potatoes in the last minute of cooking so the herbs don’t burn in the air fryer. Adding a little oil to the herbs will help them from burning, also. And if you add fresh herbs, then you don’t need to also add the dried version. You can also mix in air fryer roasted garlic.
  • Add some spice. Make these potatoes a little spicy by adding cayenne pepper or red pepper flakes.

How to Store & Reheat

How to store it? Let the potatoes cool and put in an airtight container. It should last about 3-4 days in the fridge.

How do you reheat potatoes? Pre-heat the air fryer to 370° F. Cook for 5-7 minutes until heated through.

Can I Freeze Cooked Potatoes?

How to freeze it? Let the potatoes cool completely before putting onto a baking sheet and place into the freezer. Freeze for 1-2 hours then place into an airtight, freezer safe container. They can be frozen for 2-3 months, just be sure to label with the recipe and date. The re-heated potatoes may have a change in texture from what they were originally.

Ingredients

  • 1 1/2 pounds mini potatoes
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon dried crushed rosemary
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Notes

    • Make sure the potatoes are completely dry before cutting them and adding them to the oil or the skins will end up tough.
    • Serve hot potatoes as soon as they are cooked. Potatoes that sit around continue to cook and will end up gummy inside.
