Air Fryer Baby Potatoes
These golden miniature potatoes get coated in a sprinkling of seasonings, freshly grated pepper, and a touch of salt. They cook up perfectly with crisp outsides and buttery soft middles right in the air fryer and make an amazing side dish!

- 1 1/2 pounds mini potatoes
- 2 teaspoons extra virgin olive oil
- 1 teaspoon dried crushed rosemary
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
Wash the potatoes making sure to scrub them well. Dry the potatoes completely and cut them in half. Add to a large bowl.
Preheat the air fryer to 400°F.
Add the cut potatoes to a bowl, drizzle on the oil and mix around until potatoes are fully coated.
Sprinkle on the salt, pepper, dried garlic, and dried rosemary. Mix well.
Add the potatoes to the hot air fryer. Cook for 8 minutes, then open the air fryer and shake the basket. Cook for an additional 4-6 minutes. Fully cooked potatoes will be easily pierced with a fork. Serve immediately.

- Make sure the potatoes are completely dry before cutting them and adding them to the oil or the skins will end up tough.

- Serve hot potatoes as soon as they are cooked. Potatoes that sit around continue to cook and will end up gummy inside.
