This recipe is for a broth-based soup packed full of Tex-Mex flavors that will please the whole family. Although this soup is low in Weight Watchers points, it is high in flavor!

It has a rich, spicy broth thanks to the fresh jalapeno, and a variety of spices, including cumin, chili powder, Ranch dressing mix, and more.

All of these ingredients add a ton of flavor with minimal extra calories, leaving you plenty of room to add a few fun toppings before serving. You’ll want to make this recipe at least once a week!

Weight Watchers Taco Soup Ingredients

  • Olive oil: This will help soften the vegetables to draw out their flavors.
  • Onion: Dice the onion ahead of time for easy cooking.
  • Bell pepper: Sauté the diced bell peppers after the onions soften.
  • Garlic: Garlic is one of my secret ingredients to add tons of flavor with barely any calories.
  • Jalapeño: Jalapeño adds a nice, bright heat to this delicious soup!
  • Ground turkey: This is a lean alternative to ground beef and has zero points!
  • Spices: This Weight Watchers taco soup recipe uses chili powder, ranch seasoning, cumin, paprika, oregano, onion powder, salt, and pepper to add a ton of flavor without the calories.
  • Broth: Use chicken broth or diluted chicken bouillon paste.
  • Diced Tomatoes with Green Chiles: Diced tomatoes help bring out all of the flavors in this recipe. Try using Rotel tomatoes with green chilies. These add a little extra heat and real Southwestern flavor!
  • Black beans: You’ll need to rinse one can of beans for this recipe. Feel free to use pinto beans or kidney beans instead.
  • Frozen corn: Substitute canned corn if that’s more convenient.

How to Make Weight Watchers Taco Soup

Here are the simple instructions to make Weight Watchers soup, check out the recipe card at the bottom of this post for full instructions.

  1. In a large pot, add olive oil and put over medium heat. Once hot, add in diced onion. Cook for about 3-4 minutes, add bell pepper, and continue cooking for another 5 minutes.
  2. Add in minced garlic and jalapeno. Cook for 2 minutes.
  3. Add ground turkey, breaking up the larger pieces, about 3-4 minutes.
  4. Stir in chili powder, dry ranch seasoning, cumin, paprika, oregano, onion powder, salt, and pepper.
  5. Pour in the broth, green chilies, and tomatoes, bring up to a boil, then reduce the heat down to a simmer. Cook for 30 minutes.
  6. Add in beans and frozen corn and cook for 5 more minutes. Remove from heat.
  7. Top with taco toppings and serve hot.

How to freeze taco soup? Let the soup cool completely (without the toppings) before putting into an air tight, freezer-safe container or ziplock freezer bag. You can lay bags flat in the freezer for space saving storage. Soup can be frozen for 3 months, just be sure to label with the recipe and date.

How to thaw taco soup? Thaw frozen cooked soup in the refrigerator 1-2 days until defrosted or in a water bath.

Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 4 clove garlic minced

  • 29 ounce can diced tomatoes with chiles
  • 15 ounce can black beans drained and rinsed
  • 1 cup corn frozen

Instructions

  • In a large pot, add olive oil and put over medium heat. Once hot, add in diced onion and bell pepper, cook for 5-8 minutes until soft.
  • Add in minced garlic and jalapeno. Cook for 2 minutes.
  • Add ground turkey, breaking up the larger pieces, about 3-4 minutes.

  • Pour in the broth and tomatoes. Bring up to a boil, then reduce the heat down to a simmer. Cook for 30 minutes.

    Yes, you can make this in a crockpot. Just saute the onions, and bell pepper in a skillet for 5-8 minutes in oil. Add diced jalapeño and garlic, cook for 2 minutes. Add in ground turkey. Sprinkle on the seasonings and cook the turkey until no longer pink. Add the ground turkey mixture to the slow cooker with the tomatoes, black beans, corn, and broth. Cover and cook on low for 6-8 hours, or high for 3 hours. Add salt and pepper to taste.
    Before serving, top with favorite toppings.
