Microwave Mug Omelette
I am a busy mom and most days, especially busy mornings, I am running short on time. That’s why I am a huge fan of quick recipe ideas, that are also easy and healthy. While these mug omelets are perfect for breakfast, I like these even better made for brinner (which is eating breakfast foods for dinner).
But, these omelets are also so great as a quick breakfast. The protein in the eggs and cheese will help keep you going until lunch (or at least till snack time). Or make it lunch in a mug! Once you get the veggies prepped, these only need TWO minutes to cook.
You can even make this omelet ahead of time! Simply prepare all of your ingredients and put it all in the mug. Refrigerate uncooked mixture until you are ready to eat it. Then just heat it and add any toppings to the top.

If I am super short on time and ingredients (whoops, haven’t made that grocery run yet), this omelet is also amazing if it’s only made with just eggs and cheese. I use cheddar cheese, but there are so many cheese options out there it’s ridiculous! Try out gooey Swiss or provolone, or a dry cheese like feta.
Cooking eggs in the microwave has become my favorite way to make them. And this recipe makes way less of a mess than a traditional omelet. There is no cooked on egg to scrub off of a pan. That is a bonus for me on top of a quick cooking meal.
This would be the perfect breakfast for a dorm room or a hotel room. And it can be served right in the mug or turned out onto a plate. This recipe will make one omelet in a mug, but you can easily double or triple the recipe to feed more people. This omelet is great for vegetarians or a keto diet.
Can I Customize This Mug Omelet?
One thing I absolutely LOVE about this two minute omelette recipe, is that it is so customizable. Feel free to get super creative here. You can make an all veggie omelet or just an egg omelet.
You can add in almost any vegetables, cheeses, or meats that you like. Just make sure that any ingredients you add in are already pre-cooked because there isn’t enough time to fully cook or soften them.
Like I said before, a simple cheese omelet is also a great way to make an easy and delicious protein-packed breakfast. The best part is that it has a quick cooking time, these microwave eggs are done in 1-2 minutes cooked at 30-second intervals.

Is it Omelet or Omelette?
Guess what? Both are correct! It can be spelled either way.
Omelet in a Mug Ingredients
Here are the simple ingredients needed to make this microwave omelette recipe. Check out the recipe card at the bottom of this post for full ingredient amounts.
- Eggs: I love to use brown pasture-raised eggs. I like that the yolk is a deeper color and they are more nutritious.
- Milk: I used whole milk, but any milk will work even almond milk (just don’t use the vanilla or sweetened version).
- Cheese: Cheddar cheese is usually my go-to, but most cheese will work. Try shredding it yourself from a block instead of using pre-shredded.
- Tomatoes: Grape or cherry tomatoes cut into fourths.
- Cilantro: You will need fresh cilantro for this recipe.
- Spinach: I used fresh, baby spinach.
- Avocado: These are optional.
- Salt: I like using a coarse sea salt.
- Pepper: Freshly ground black pepper will give you the best flavor.
How to Make an Omelet in a Mug
Here are the basic instructions to make mug omelettes. The recipe card below will give more specific measurements and instructions on how to make this mug omelette recipe.
- Crack two whole eggs in a large microwave-safe mug that has been sprayed with cooking spray or greased with unsalted butter.
- Beat eggs with a fork.
- Add in the tablespoon milk and mix together with the fork.
- Add the rest of the ingredients (except for the avocado, if using) into the mug and stir together.
- Microwave for 30 seconds. Stir the mixture to make sure it cooks evenly.
- Microwave for an additional 60 seconds. If egg mixture still looks a little wet on top, microwave for 30 more seconds.
- Serve topped with avocados (if using) and additional cheese and cilantro.
Alternate Topping Ideas
There are so many variations of the mug omelet you can make with a variety of mix ins. Let us know what your favorites are down in the comments below.
- Peppers. Use a green pepper or red bell pepper diced into tiny pieces. You could even use jalapeƱo peppers that are deseeded and diced very small.
- Onions. If you don’t mind crunchy onions, you could add a small amount of very finely diced yellow onion or white onion. Green onions are also really good in mug omelets.
- Spicy. Add extra black pepper, chipotle powder, tabasco sauce or hot sauce, or red pepper flakes.
- Egg White. Use egg whites instead of full eggs. You can separate out the egg yourself or buy prepackaged egg whites.
- Deli Meat. Add in small dices of your favorite lunch meat like ham, salami, or smoked turkey.
Omelet in a Mug Tips
- Dairy free. Keep this recipe dairy free by using unsweetened almond milk (non vanilla) and leave out the cheese.
- Keep an eye on it. While the omelet is cooking, the eggs will rise. So keep an eye on it to make sure it doesn’t overflow. That’s why it’s important to use a coffee mug that is the right size.
- Make ahead of time. Make this omelet ahead of time by preparing all of the ingredients according to the recipe. Then just put the mug, covered in the fridge, until you are ready to cook it. Cook for 45 seconds (because mug is cold), then stir it and cook for one more minute. If it’s still wet looking on top, microwave for more 30 seconds.
- It’s hot. The mug omelet will be really hot when it comes out of the microwave, so make sure to use pot holders or a towel to remove the cup.
- Don’t overcook. Be careful not to overcook the omelet or it could end up dry and rubbery. If it’s still a little wet on top after cooking, just microwave for 30 more seconds until it is to your liking.
- Big coffee mug. Use a large coffee cup to keep from overflowing.
Omelet in a Mug Variations
- Make the omelet just egg and cheese.
- Swap out the vegetables for some of these: green onion, chives, onion, finely chopped bell pepper, basil, cooked mushrooms, or steamed broccoli.
- Use a variety of cheeses such as parmesan, feta, or mozzarella.
Storage Instructions for Omelet in a Mug
- How to Refrigerate Mug Omelet: Let the omelet cool and put in a glass container or BPA-free airtight plastic container or zipper bag. It should last about 3-4 days in the fridge.
- How to Reheat Mug Omelet: Reheat cold omelet in the microwave for a few seconds at a time until desired warmth is reached.

Ingredients

- Remove carefully from the microwave, cup will be hot. Top with a little extra cheese and avocados.
Notes

- This omelet will stay good in an airtight container for up to 3-4 days.
