Omelet in a Mug is a hearty and healthy meal, filled with protein and vegetables. This Mug Omelet is a quick breakfast that will help keep you energized and full until lunch.

I am a busy mom and most nights I am running short on time. That’s why I am a huge fan of quick dinner ideas, that are also easy and healthy. While these mug omelets are perfect for breakfast, I like these even better made for brinner (which is eating breakfast foods for dinner).
But, these omelets are also so great as a quick breakfast. The protein in the eggs and cheese will help keep you going until lunch (or at least till snack time). Or make it lunch in a mug! Once you get the veggies prepped, these only need TWO minutes to cook.
You can even make this omelet ahead of time! Simply prepare all of your ingredients and put it all in the mug. Refrigerate uncooked mixture until you are ready to eat it. Then just heat it and add any toppings to the top.

If I am super short on time and ingredients (whoops, haven’t made that grocery run yet), this omelet is also amazing if it’s only made with just eggs and cheese. I used cheddar cheese, but there are so many cheese options out there it’s ridiculous! Try out gooey Swiss or provolone, or a dry cheese like feta.
This recipe makes way less of a mess than a traditional omelet. There is no cooked on egg to scrub off of a pan. That is a bonus for me on top of a quick cooking meal.

This would be the perfect breakfast for a dorm room or a hotel room. And it can be served right in the mug or turned out onto a plate. This recipe will make one omelet in a mug, but you can easily double or triple the recipe to feed more people. This omelet is great for vegetarians or a keto diet.
Can I Customize This Mug Omelet?
One thing I absolutely LOVE about this omelet recipe, is that it is so customizable. Feel free to get super creative here.
You can add in almost any vegetables, cheeses, or meats that you like. Just make sure that any ingredients you add in are already pre-cooked because there isn’t enough time to fully cook or soften them.
Like I said before, a simple cheese omelet is also a great option! Easy and delicious.

Is it Omelet or Omelette?
Guess what? Both are correct! It can be spelled either way.
Omelet in a Mug Ingredients
- Eggs: I love to use brown pasture-raised eggs. I like that the yolk is a deeper color and they are more nutritious.
- Milk: I used whole milk, but any milk will work even almond milk (just don’t use the vanilla or sweetened version).
- Cheese: Cheddar cheese is usually my go-to, but most cheese will work. Try shredding it yourself from a block instead of using pre-shredded.
- Tomatoes: Grape or cherry tomatoes cut into fourths.
- Cilantro: You will need fresh cilantro for this recipe.
- Spinach: I used fresh, baby spinach
- Avocado: These are optional.
- Salt: I like using a coarse sea salt.
- Pepper: Freshly ground pepper.

How to Make an Omelet in a Mug
The recipe card below will give more specific measurements and instructions on how to make this Mug Omelet.
- Crack two eggs in a large microwave safe mug that has been oiled or greased (I used butter on mine).
- Beat eggs with a fork.
- Add in the milk and mix together with the fork.
- Add the rest of the ingredients (except for the avocado, if using) into the mug and stir together.
- Microwave for 30 seconds. Stir the mixture to make sure it cooks evenly.
- Microwave for an additional 60 seconds. If egg mixture still looks a little wet on top, microwave for 30 more seconds.
- Serve topped with avocados (if using) and additional cheese and cilantro.

Omelet in a Mug Tips
- Keep this recipe dairy free by using unsweetened almond milk (non vanilla) and leave out the cheese.
- While the omelet is cooking, the eggs will rise. So keep an eye on it to make sure it doesn’t overflow.
- Make this omelet ahead of time by preparing all of the ingredients according to the recipe. Then just put the mug, covered in the fridge, until you are ready to cook it. Cook for 45 seconds (because mug is cold), then stir it and cook for one more minute. If it’s still wet looking on top, microwave for more 30 seconds.
- The mug omelet will be really hot when it comes out of the microwave, so make sure to use pot holders or a towel to remove the cup.
- Be careful not to overcook the omelet or it could end up dry and rubbery. If it’s still a little wet on top after cooking, just microwave for 30 more seconds until it is to your liking.
- Use a medium to large mug to try to keep it from overflowing over the side.
Omelet in a Mug Variations
- Make the omelet just egg and cheese.
- Swap out the vegetables for some of these: green onion, chives, onion, finely chopped bell pepper, basil, cooked mushrooms, or steamed broccoli.
- Use a variety of cheeses such as parmesan, feta, or mozzarella.
Storage Instructions for Omelet in a Mug
- How to Refrigerate Mug Omelet: Let the omelet cool and put in a glass container or BPA-free airtight plastic container or zipper bag. It should last about 3-4 days in the fridge.
- How to Reheat Mug Omelet: Reheat cold omelet in the microwave for a few seconds at a time until desired warmth is reached.
