Easy Chopped Cheese Sandwich
This Chopped Cheese Sandwich is one of those easy, no-fuss meals that’s perfect any time of year, but it really shines during busy weeknights or laid-back weekends. It’s hearty enough to warm you up on cooler days, but still simple and quick enough to throw together when you don’t feel like spending hours in the kitchen.
One of the best things about this recipe is how straightforward it is. You’re using simple, affordable ingredients. But the way everything comes together (like the seasoned ground beef, melty cheese, and toasted rolls) makes it feel like something special. Plus, it’s super customizable, so you can load it up with your favorite toppings or keep it classic.
Flavor-wise, this sandwich is rich, savory, and incredibly satisfying. The beef is perfectly seasoned, the cheese melts into every bite, and the fresh lettuce and tomatoes add just the right amount of crunch and freshness. It’s messy in the best way and guaranteed to hit the spot every single time.
Chopped Cheese Sandwich Ingredients
- Ground Beef: I suggest using a lean ground beef for the best flavor (and least amount of grease).
- Herbs and Spices: I used a combination of salt, pepper, oregano, and paprika.
- Onion: Use your favorite kind of onion, as long as it’s finely chopped.
- Garlic: Fresh garlic cloves boost the aroma and flavor of the beef.
- Rolls: Hoagie rolls will hold everything without falling apart.
- Cheese: American cheese melts perfectly with the ground beef.
- Mayonnaise: Use your favorite brand to help hold everything together and add even more flavor.
- Lettuce: Shred your favorite lettuce – I use iceberg.
- Tomatoes: These are optional but add some essential sweetness to the sandwiches.

Frequently Asked Questions
Can I make chopped cheese sandwiches ahead of time? These sandwiches are best enjoyed fresh while the beef is hot and the cheese is perfectly melted. However, you can cook the ground beef mixture in advance and refrigerate it for up to 3 days. When ready to serve, simply reheat the meat and assemble the sandwiches for the best texture and flavor.
What type of bread works best for a chopped cheese sandwich? Hoagie rolls are the top choice because they’re sturdy enough to hold the juicy filling without falling apart. You can also use sub rolls or hero bread if that’s what you have on hand. Just make sure to toast them so they stay crisp and hold everything together.
How to Store & Reheat
How to store it? For best results, store the chopped cheese filling and the bread separately. Let the cooked ground beef cool completely, then transfer it to an airtight container and refrigerate for up to 3-4 days. Keeping the filling separate helps prevent the bread from getting soggy.
If you already assembled the sandwiches, wrap them tightly in foil and store them in the refrigerator for up to 2 days. Reheat in the oven at 350°F until warmed through so the bread crisps back up, and the cheese melts again. Avoid microwaving if possible, as it can make the bread soft.
How to freeze it? It’s best to freeze the beef mixture and the bread separately. Let the cooked meat cool completely, then place it in an airtight, freezer-safe container or bag and freeze for up to 2 to 3 months. Keep the rolls at room temperature until ready to use, since freezing already-assembled sandwiches can make the bread soggy.
If you want to freeze the whole sandwich, wrap each one tightly in foil or plastic wrap, then place it in a freezer bag. Freeze for up to 1 month for the best texture. When you’re ready to eat it, thaw in the refrigerator overnight and reheat in the oven until warmed through and the cheese is melted.
For the freshest result, add the lettuce and tomatoes after reheating. That way, the sandwich still has that fresh crunch and doesn’t lose its texture.

Chopped Cheese
Ingredients
- 1 1/2 pounds ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 teapoons dried oregano
- 1/2 teaspoon paprika
- 1 very small finely chopped onion, or half an onion
- 4 large garlic cloves, minced
- 6 hoagie rolls
- 12 slices American cheese, unwrapped
- 1/3 cup mayonnaise
- tomatoes
- iceberg lettuce, shredded
Instructions
-
Preheat the oven to 350° F.
-
Add ground beef to a large skillet over medium-high heat. Sprinkle on salt, oregano, paprika, and pepper. Cook about 7 minutes, flipping and breaking up the beef in small pieces, it will still have a little pink.
-
Push the ground beef to one side of the pan and add in the diced onions, cooking them for about 5 minutes.
-
While the onions are cooking, place rolls cut side up on two parchment paper lined baking sheets. Toast for 5 minutes in the oven, then turn the broiler to high and toast for one more minute, watching to make sure they don’t burn. Pull them out, turn the broiler off, but keep the oven on at 350°F.
-
Add minced garlic to the softened onions, cook for one minute. Drain off all of the grease. Then mix the onions together with the ground beef.
-
Spread some mayo to one side of each one of the toasted rolls.
-
Scoop ⅙ of the ground beef onto the toasted roll and place back on the baking sheet. Place 2 slices of the cheese on top of the ground beef. Repeat for all six rolls.
-
Place the sandwiches in the oven for 1-2 minutes just until the cheese melts. Pull them out of the oven and top with tomatoes and lettuce. Serve immediately.
