I know what you are wondering. How could these cookies be any good if they are made with a box cake mix?
If you have never had cookies made with cake mix, you need to stop what you are doing and go buy some strawberry cake mix. Just so you can make these cookies.
Life is hard and sometimes we just need a dessert recipe that is going to make our lives a little bit easier (and tastier).
Strawberry Butter Cookies
If you are newer to baking, then you will love these strawberry butter cookies because they are sooo simple.
And they only require 5 ingredients. That’s it! Just five ingredients mixed together, baked, and before you know it you will be sinking your teeth into these gooey cookies.
The texture is irresistible, with a slightly crisp bottom but chewy inside.
Sweet treats don’t last long in this house. These strawberry cake mix cookies normally fly off the plate as soon as I make them. They are always a crowd pleaser and this is the best cake mix cookie recipe.
These are definitely one of my favorite treats to make for Valentines Day, the pink just really pops. They just look so cute and festive. My kids expect these around Valentines Day, but I also like to make them year round. I’ve even made them for a baby shower.
Make them Chocolate Chip Strawberry Cookies
I love these strawberry cookies just as they are, but if you are feeling adventurous you could even take them a step further! You could add chocolate chips to them…yeessss. Use milk chocolate, dark chocolate, semi-sweet chocolate, even white chocolate.
Add in about a cup to the cookie batter. And if you really want them to look pretty, add more chocolate chips as soon as they come out of the oven. Just gently press in the chips to the tops of all the cookies. You will have to work quickly and carefully as the cookies are going to be hot and you want to make sure you get chocolate chips on all of them before they cool down.
Strawberry Butter Cookies Ingredients
Only a few basic ingredients are needed to make these strawberry cookies. Check out the recipe card for full amounts.
- Cream Cheese: Full fat cream cheese that is at room temperature.
- Butter: Real butter that is at room temperature.
- Egg: One large egg at room temperature.
- Strawberry Cake Mix: Choose your favorite brand, I like Duncan Hines.
- Powdered Sugar: To roll the cookies in before baking.
How to Make Strawberry Cookies
These are the basic instructions for making strawberries cookies. Check out the recipe card below for full instructions.
- Preheat the oven.
- Line two baking sheets with parchment paper.
- In the bowl of a stand mixer, cream together the butter and cream cheese.
- Add in egg and combine until well mixed.
- Turn to low and add in the cake mix. This dough is going to be on the thick side.
- Pour powdered sugar to a bowl. Using a tablespoon sized dough scoop or spoon, scoop dough and roll into 1-inch sized balls. If dough is too sticky to deal with, you can refrigerate it 30-60 minutes. Roll into the powdered sugar. Place 2 inches apart on the baking sheets.
- Bake cookies. The centers should be set but don’t let cookies get too brown.
- Cool on cooling rack.
Strawberry Butter Cookies Tips and Variations
- Refrigerate dough. This batter ends up thick and may need to be refrigerated before scooping if you find that it is a little sticky. You can refrigerate for 30-60 minutes. I find that the cookies stay a little puffier after being baked without being refrigerated.
- Don’t over bake. Make sure not to over cook these cookies. Once they just barely start to brown you want to pull them out of the oven. You don’t want the pink to turn too brown.
- Add chocolate chips. You could add chocolate chips to these. You could use dark chocolate, semi sweet chocolate, milk chocolate, or even white chocolate chips. Add in 1 cup to the cookie batter.
- Try other flavors. You can try this recipe with other cake mix flavors. Try it with chocolate cake, vanilla cake, lemon cake, or your favorite.
- More strawberry flavor. Add 1 teaspoon of strawberry extract to the batter if you really want strawberry flavor.

Ingredients

I made these cookies for my daughter’s baby shower. I did refrigerate the dough for 30 minutes and then put back in between trays and they turned out very puffy! Very good. Used Duncan Hines cake mix.
