What are Cabbage Steaks?
A whole head of cabbage is cut into thick slabs, drizzled with a generous amount of olive oil, and popped into the oven. If you are wondering why they are called “steaks,” it is not because it looks like nor tastes like actual steak. It is just because it is cut into a thick slice that can be eaten with a knife and fork kind of like a steak. It is a great alternative to steak if you are on a plant based diet!

Hooray, it’s Freaky Friday (my favorite Friday)! If you are wondering what I am talking about, Freaky Friday is a blog hop that happens every quarter that was created by Michaela from An Affair From the Heart. You HAVE to go check out her blog, she has got some of the best recipes and is a just a great person!
If you aren’t familiar with this event, I’ll explain it. A bunch of bloggers get assigned someone else’s blog within the group. But, shhhh, it’s a secret and you can’t tell anyone who you got. You then get to pick one recipe that goes along with the particular season and recreate it for your own blog. Then on the day of the reveal, you get to share with your readers and everyone in the group, which blog you got (and who got you!). So fun, right?!
For this quarter, I was randomly assigned to Susan’s Blog, The Wimpy Vegetarian. As her blog’s name suggests, it is full of vegetarian recipes!
I loved getting to learn more about Susan when checking out her about me page. Just three years into her marriage, she informed her meat eating husband that she was moving towards a plant based diet! He wasn’t thrilled at first, but over time started eating some of her vegetarian foods alongside his meat. That is some great progress!
There are seriously some mouthwatering recipes on Susan’s blog. I had a problem trying to decide exactly which recipe to make because she has so many to choose from. I mean she has some sweets like this Blueberry Scone Bread, delicious with a cup of coffee, Apple Pie Crumble, and this amazing three layer Carrot Cake with a coconut cream cheese frosting.
Some recipes I know I will be trying are Sweet Potato and Chickpea Curry, Vegan Sloppy Joe Sliders, this Orange Mango Smoothie, and this Berry Pineapple Salad.
But, I saw the gorgeous picture of her delicious cabbage steaks and being a cabbage lover (and garlic lover) just knew I had to try this recipe. Plus, it is just in time for St. Paddy’s Day! Make it with corned beef, some chunky potatoes and carrots and you have yourself the perfect meal.

How to Cut the Cabbage Steaks
It is really easy to cut cabbage as long as you have the necessary tools like a sharp knife and a good cutting board.
Step 1: Pull off any loose leaves or any outer leaves that are damaged or browning. Wash the cabbage well. Dry off with paper towels or a lint free towel.
Step 2: Set the whole cabbage on its side. Cut off the stem.
Step 3: Turn the cabbage so that it is resting on the cut end, this helps provide some stabilization.
Step 4: Cut thick slices of cabbage that are 1 – 1 1/2 inches in thickness. You should get 6 or 7 1-inch-thick rounds.
Cabbage Steak Ingredients
Make this easy cabbage recipe with only a handful of ingredients. Check out the recipe card at the bottom of this blog post for full amounts.
- Cabbage: I like to use a small cabbage. If your cabbage is larger, you may have to use two baking sheets and cook in batches.
- Oil: Extra virgin olive oil will add a little crispness.
- Garlic: I took Susan’s advice and used garlic paste because it makes it really easy to spread onto the steaks. You can also use fresh garlic, you will probably around 4-6 cloves that have been minced or use garlic powder.
- Caraway Seeds: These add an herby, licorice flavor. You can also use fennel seeds for a similar flavor.
- Salt: Since my garlic paste contained added sodium, I reduced the amount of salt from 1 teaspoon down to 1/2 teaspoon. You can also use less salt if desired. I like kosher salt or flakey sea salt.
- Pepper: Freshly ground black pepper gives the best flavor.
- Parsley: Fresh parsley is optional, serve the cooked cabbage with a sprinkling of chopped parsley
How to Make Cabbage Steaks
Here are the basic instructions to make this easy side dish. Check out the recipe card for full instructions.
- Preheat your oven and line a sheet pan with parchment paper.
- Prepare and slice the cabbage into 1 – 1 1/2″ slices.
- Place thick cabbage slices on the prepared baking sheet in a single layer.
- Brush one side of the cabbage slices with half of the olive oil, garlic paste, caraway seeds, salt, and pepper. Carefully flip each slice over and apply the remaining oil, garlic, seeds, salt, and pepper.
- Place cabbage steaks into the oven and cook for 20 minutes. Very carefully flip the steaks over and roast another 20 minutes until the cabbage has crispy edges.
- Serve hot, as the cabbage cools it gets much softer.
Health Benefits of Cabbage
Cabbage is a leafy green vegetable that is closely related to the family of brussels sprouts, broccoli, and radishes. Cabbage heads can come in other colors besides green, like white, red, or purple.
While you may not think so because of it’s pale color, it is actually really nutritious, has plenty of fiber and is a great source of vitamin K and vitamin C. It’s also really low in calories so you can eat a lot of it!
Tips for Success
- Make sure to cut the cabbage in thick pieces (1 – 1 1/2 inches) to keep them together, otherwise it will fall apart.
- I didn’t really get a crispy texture in my cabbage steaks, but Susan says this could be because the cabbage may have a high water content or you may live in a humid area (I live in the south, so I probably have both of these scenarios). Try her trick to get crispier cabbage. Put the cut cabbage slices on parchment paper or a lint free towel. Lightly salt and let it sit for 30 minutes. Then use a paper towel to dry off any excess moisture. Then continue with the recipe.
Recipe Variations
- Red cabbage steaks. Use a head of red cabbage or purple cabbage instead of green cabbage.
- Cauliflower steaks. Instead of cabbage, slice up a whole head of cauliflower.
- Different flavor. Use your favorite herbs or spices to add your own variation of flavor. You can use dried or fresh herbs.
- Lemon. Add a squeeze of lemon juice onto baked cabbage steaks.
- Cheese. Sprinkle on your favorite cheese (we like parmesan cheese, but it is not a vegetarian cheese) onto cooked cabbage steaks.
Frequently Asked Questions
Is this recipe keto friendly? Since cabbage only contains 2 net carbohydrates for one cup of shredded cabbage, it makes a perfect addition to a keto diet.
Is this recipe gluten free? Make sure that the garlic paste you use is gluten free, if you can’t find one just use real garlic cloves. Also, be sure to check your herbs and spices for anti caking ingredients that may contain gluten. Besides that this recipe is gluten free.
How to Store & Reheat
Let the cabbage cool and put in an airtight container. It should last about 3-5 days in the fridge, but will not be the same texture as when it was fresh.
How do you reheat cabbage? You can reheat cabbage on the stove over medium heat for 15-20 minutes until heated through. Or put in the microwave until it has reached the desired temperature.
Can I Freeze Roasted Cabbage?
How to thaw cabbage? Thaw frozen cooked cabbage on a plate in the refrigerator overnight until defrosted. Do not try to rush this process by thawing at room temperature.
How to freeze cabbage? Cabbage can be frozen if you absolutely have to freeze it. Just keep in mind that the thawed texture may not be as good as it was. Let cabbage cool completely before putting into an air tight, freezer safe container. It can be frozen for 3-6 months, just be sure to label with the recipe and date.
