- 1 - 1 1/2 pounds steak sirloin, ribeye, or strip steak
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 3 tablespoons butter unsalted
- 3 large garlic cloves minced
- 1/2 tablespoon fresh rosemary finely chopped
- 1/2 teaspoon worcestershire sauce
Start heating a cast iron skillet over medium-high heat.
Cut off any fat then cut the steak into 1-1 ½ inch cubes, pat them dry with paper towels. Season evenly with the salt and pepper.
Pour the oil into the hot pan.
Add the steak bites into the hot oil in a single layer, but don’t crowd the pan and cook in batches if needed.
Sear for 1-2 minutes, then flip each piece over and cook for 1-2 more minutes. Cooking for 3 minutes for medium rare or 4 minutes for medium. Remove the steak from the pan.
Drop the heat down to medium. Once the pan has cooled, add in the butter and chopped rosemary. Let cook for 1 minute.
Add the garlic and cook for 30 seconds. Stir in the worcestershire sauce. Return the steak bites and stir into the butter mixture.
