Homemade popsicles are entirely underrated. They’re a fantastic way to use fresh produce, and these homemade mango popsicles are genuinely delicious!

Since mangoes are naturally creamy, you don’t need to add coconut milk or yogurt to these mango ice pops. They have the perfect texture and are just bursting with fresh flavor. Because of this, it’s the perfect fruit for mango panna cotta! But, using coconut milk works out perfectly in these cherry popsicles.

And if you love fruity desserts try this mango sorbet or mango chutney as a delicious appetizer.

What are Paletas de Mango?

In Mexico, popsicles are called paletas, and they’re loaded with tons of real fruit. They aren’t the bland, overly icy store-bought popsicles from the grocery store. They’re like a delectable treat, perfect for those hot summer days. This delicious mango popsicle recipe uses fresh lime juice to draw out the natural flavors in fresh mango chunks. They’re such a refreshing treat and will become your new favorite dessert during mango season!

Mango Paletas Ingredients

  • Diced mango: The base for this recipe is fresh mangoes! You’ll need to peel and cube 3-4 mangoes. You can also use frozen mango or mango puree.
  • Lime: Lime juice enhances the sweet-tart flavor of mangoes and makes these easy mango popsicles so refreshing.
  • Sugar: For a little extra sweetness, add some regular sugar. Omit if using mango nectar.
  • Water or mango nectar: To thin out the popsicles, add either water, mango nectar, or coconut water. This is optional if you need a little liquid to make your blender run. Only add about 1/4 cup at a time until desired consistency is reached.

How to Make Paletas de Mango

  • Prepare the mangoes: Wash the mangoes. Cut through the mango as close to the pit as you can get on both sides. Try to get all of the flesh off of the mango pit. Then cut the mango halves into diagonal slices but not all the way through the skin. Cut them off the mango skin. 
  • Make the popsicle mixture: In a blender, add the cut mango, lime juice, sugar, and water if needed.
  • Fill the molds: Pour the mixture into the popsicle molds, filling them most of the way but leaving a gap for expansion. Add the popsicle sticks.
  • Freeze: Place in the freezer and freeze for 6 hours or overnight. If you would like fewer ice crystals in your ice pops, stir them about halfway through the freezing time.
  • Unmold: Run the paleta mold under warm water to easily remove it from the mold, being careful not to get water on the open end.

Tips for Success 

  • Stir the popsicles halfway through the freezing time for best results.
  • Use a silicone popsicle mold to make pushing the mango paletas out of the mold easier.
  • If you don’t have a blender handy, you can also use a food processor.

Recipe Variations

  • Replace the liquid with coconut milk or coconut cream for creamy mango popsicles. 
  • Instead of granulated sugar, you can also use powdered sugar, honey, or maple syrup.
  • Make them sugar-free. If you prefer healthy mango popsicles with absolutely no added sugar, just skip the sugar entirely! Sugar sweet mangoes like Ataulfo are best for this.
  • Get creative with the liquid. You can even use orange juice if you can’t find mango nectar.
  • Stick some fresh fruits in the tip of the molds. Add sliced strawberries, coconut flakes, or slices of banana to the popsicle molds before topping them with the mango mixture.

How to refrigerate paletas de mango? The delicious mango popsicles need to stay frozen to be eaten as popsicles. You can chill the blended mixture in the fridge for 1-2 days until you fill the molds, but it’s typically easier to fill them right away.

How to keep at room temperature? If you need to serve this mango popsicles recipe at an event, you can set them on a bed of ice or store them in a cooler. They will begin to soften rather quickly out of the freezer.

Can I Freeze Mango Popsicles?

How to freeze Paletas de Mango? These tropical popsicles are a great frozen dessert and best served straight from the freezer! Once unmolded, they must either be wrapped in parchment paper or plastic wrap to prevent freezer burn. Store your wrapped popsicles in a freezer-safe bag for 1-2 months and enjoy.
