Hamburger Soup

This Hamburger Vegetable Soup recipe may be made with simple ingredients like fresh ground beef, softened vegetables, and some aromatic seasonings, but the flavor is far from basic. It’s the kind of soup that will warm you up and fill you up!

Easy Hamburger Vegetable Soup for Dinner

Hamburger soup is a thick and hearty soup that offers loads of flavor with every spoonful. The blend of tender ground beef and plenty of veggies, ensures that every bite feels satisfying and filling. As this soup simmers, all of the ingredients meld together to develop the richness and depth of the broth. It tastes like it’s been cooking all day even though it hasn’t been.

This soup is great way to use up any vegetables you may have in the fridge, freezer, or pantry. There are plenty of other options such as corn, lima beans, or peas to make it your own.

Although, it does take some time to prepare all of the vegetables, this soup will be cooked and on the table in less than 45 minutes.

Hamburger Soup Ingredients

  • Oil: This helps soften the onion and celery, use a good vegetable oil.
  • Vegetables: Onion, celery, garlic, potatoes, carrots, bell pepper, green beans, and tomatoes are the vegetables used in this soup recipe.
  • Beef: I like to use 85/15 or 80/20 ground beef, it has enough fat so that it cooks well in a soup without getting dried out.
  • Seasonings: The seasonings used are pantry staples like salt, pepper, worcestershire sauce, dried parsley and dried oregano.
  • Broth: Since we are cooking with beef, I use beef broth. But, really any broth will work like chicken or vegetable. If you use low sodium broth, you may need to add more salt at the end of cooking.
  • Tomato paste: Adds depth of flavor to the soup. You could use a can of tomato sauce instead if that is what you have on hand.

How to Make Hamburger Soup

Here are the basic instructions to make hamburger soup. Check out the recipe card at the bottom of this blog post with full ingredients and instructions to make it.

Step one is a pot with sauteeing onions and celery.
STEP 1: In a large pot, saute the onions and celery in the oil. Add the garlic and cook for one more minute. 
Step two is adding the ground beef in with the softend onions and celery.
STEP 2: Add the ground beef, ¼ teaspoon of salt and ¼ teaspoon pepper. Cook until browned through. Drain off any fat.
Step three is the cooked beef mixed with the onions and celery.
STEP 3: Place over high heat and add in the broth, potatoes, carrots, bell pepper, green beans, can of tomatoes, tomato paste, worcestershire sauce, parsley, oregano, the rest of the salt and pepper. 
Step four is all of the other ingredients added in.
STEP 4: Bring up to a boil, then cover. Reduce heat down to medium and simmer for 20-25 minutes until potatoes are fork tender. Season with more salt and pepper to taste.

Cooking Tips and Tricks

  • After browning the meat, drain off as much grease as you can. You can also skim off any orange foam that floats to the top of the soup after cooking.
  • I use gold potatoes so that they do not need to be peeled. Red potatoes could also be used. If you use russet potatoes they will need to be peeled because their skin is much thicker.
  • You can use frozen green beans instead of canned, I just like the softer texture of canned green beans.

Recipe Variations

  • Switch out the vegetables that are in this recipe for some of your favorites like corn, peas, lima beans, sweet potatoes, spinach (added at very end), zucchini, yellow squash, or mushrooms.
  • Make the soup with ground chicken or ground sausage for a different meat option.
  • You could add beans, pasta or rice.
  • Serve with a sprinkling of freshly grated parmesan cheese or chopped parsley, sliced French bread, or crackers.

Frequently Asked Questions

Can I thicken this soup? Yes, you could pull out some of the potatoes and smash them with a fork and stir them back in (you may want to add an extra potato if you plan on doing this).

Can beef vegetable soup be made in advance? This soup will get even more flavorful as it sits. Just keep in the refrigerator and use with 4 days.

How to Store & Reheat

How to store it? Let the soup cool and put in an airtight container. It should last about 4 days in the fridge.

How do you reheat ? Heat on the stove over medium low until heated through. Or heat in a microwave safe bowl, for 1-minute intervals until hot.

How to freeze hamburger vegetable soup? This soup can be frozen just know that potatoes don’t freeze well and may end up a little grainy. Let the soup cool completely before putting into an air tight, freezer safe container. It can be frozen for 3 months, just be sure to label with the recipe and date. Thaw frozen cooked soup in the refrigerator overnight until defrosted.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion finely diced
  • 4 large celery stalks thinly sliced
  • 1 1/2 pound ground beef
  • 4 large garlic cloves minced
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon black pepper divided
  • 8 cups beef broth
  • 3 medium gold potatoes bite sized cubes
  • 3 medium carrots thinly sliced
  • 1 small bell pepper diced
  • 14.5 ounce can green beans drained
  • 14.5 ounce can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons dried parsley
  • 2 teaspoons dried oregano

Instructions

  • In a large pot, saute the onions and celery in the oil for 5 minutes. Add the garlic and cook for one more minute. 
  • Add the ground beef, ¼ teaspoon of salt and ¼ teaspoon pepper. Cook until browned through. Drain off any fat.
  • Place over high heat and add in the broth, potatoes, carrots, bell pepper, green beans, can of tomatoes, tomato paste, worcestershire sauce, parsley, oregano, the rest of the salt and pepper. Bring up to a boil, then cover.
