Hamburger Soup

This Hamburger Vegetable Soup recipe may be made with simple ingredients like fresh ground beef, softened vegetables, and some aromatic seasonings, but the flavor is far from basic. It's the kind of soup that will warm you up and fill you up!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion finely diced
  • 4 large celery stalks thinly sliced
  • 1 1/2 pound ground beef
  • 4 large garlic cloves minced
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon black pepper divided
  • 8 cups beef broth
  • 3 medium gold potatoes bite sized cubes
  • 3 medium carrots thinly sliced
  • 1 small bell pepper diced
  • 14.5 ounce can green beans drained
  • 14.5 ounce can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons dried parsley
  • 2 teaspoons dried oregano

Instructions

  • In a large pot, saute the onions and celery in the oil for 5 minutes. Add the garlic and cook for one more minute. 
  • Add the ground beef, ¼ teaspoon of salt and ¼ teaspoon pepper. Cook until browned through. Drain off any fat.
  • Place over high heat and add in the broth, potatoes, carrots, bell pepper, green beans, can of tomatoes, tomato paste, worcestershire sauce, parsley, oregano, the rest of the salt and pepper. Bring up to a boil, then cover.
  • Reduce heat down to medium and simmer for 20-25 minutes until potatoes are fork tender. Season with salt and pepper to taste.

Notes

  • I use gold potatoes so that they do not need to be peeled. Red potatoes could also be used. If you use russet potatoes they will need to be peeled because their skin is much thicker.
  • You can use frozen green beans instead of canned, I just like the softer texture of canned green beans.
  • Soup will last 3 days in an airtight container in the refrigerator.
