Buttermilk Drop Biscuits

There’s just something magical about a warm batch of homemade buttermilk drop biscuits fresh from the oven. The buttery edges and that soft, tender middle practically beg for a swipe of jam or a drizzle of honey. These easy biscuits come together with simple pantry ingredients and a little love.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons granulated sugar
  • 8 tablespoons butter
  • 3/4 - 1 cup chilled buttermilk low-fat

Instructions

  • Move an oven rack to the middle of the oven. Preheat the oven to 475°F. Line a 13x9- inch baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt. Set aside.I
  • In a small microwave safe bowl, microwave the butter for 30 seconds at a time, stirring between each heat cycle until it’s melted (you may want to cover it in case it pops).
  • Pour the cold buttermilk into a 2-cup liquid measuring cup.
  • Slowly stir the melted butter into the buttermilk, it should form clumps.
  • Pour this into the flour mixture and stir until just combined.
  • Using a greased ¼ cup dry measuring cup, drop a little less than level scoops of batter about 1 ½ inches apart on the prepared baking sheet. 
  • Bake for 11-13 minutes, rotating the baking sheet halfway through baking. The tops will start to turn golden brown when they are done. 
  • Brush on a little melted butter to the tops, if desired. Let cool for about 5 minutes before serving.

Notes

  • Keep your buttermilk very cold so the biscuits bake up tall and flaky instead of dense.
  • Mix the dough just until it comes together. Overworking it can make the biscuits tough.
  • Using a 1/4 cup to scoop the dough to form biscuits.
  • Biscuits will last 3 days in an airtight container at room temperature.
