- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon baking soda
- 1 1/4 cup granulated sugar
- 3/4 cup vegetable oil
- 1/4 cup unsweetened apple sauce
- 3 large eggs room temperature
- 1 1/2 teaspoons vanilla extract
- 2 large apples peeled, cored, and cut into small pieces
Cinnamon Crumble Topping
- 1 1/2 cup all purpose flour
- 3/4 cup light brown sugar
- 1 teaspoon ground cinnamon
- pinch salt
- 12 tablespoons unsalted butter 1 1/2 sticks
Preheat the oven to 350°F. Butter a 9x13-inch baking pan and set aside.
In a medium bowl whisk together the flour, baking powder, salt, cinnamon, ginger, and baking soda, set aside.
In a large mixing bowl, mix the granulated sugar, light brown sugar, oil, apple sauce, eggs, and vanilla.
Slowly add the dry ingredients into the wet ingredients and mix until just combined.
Fold in the apples. Pour the batter into the prepared baking pan and smooth out if needed.
In a small bowl, mix together the flour, brown sugar and cinnamon. Cut in the butter and combine until small chunks form. Spread across the top of the batter.
Bake for 40-55 minutes until a toothpick comes out with a few moist crumbs. Cool completely before serving.
