Strawberry Gooey Butter Cookies

Strawberry Gooey Butter Cookies are super simple to make because they are made with cake mix! Creamy butter, rich cream cheese, and strawberry cake mix all go in to create these magical pink cookies. These strawberry butter cookies would be so perfect for Valentine's Day, Easter, baby shower or any day.

Ingredients

  • 8 ounce cream cheese 1 block, room temperature
  • 1/2 cup butter at room temperature
  • 1 large egg at room temperature
  • 1 box (15.25 ounces) strawberry cake mix
  • 1/4 cup powdered sugar

Instructions

  • Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer, cream together the butter and cream cheese. Add in egg and combine until well mixed.
  • Turn to low and add in the cake mix. This dough is going to be on the thick side.
  • Pour powdered sugar into a bowl.
  • Using a tablespoon sized dough scoop or spoon, scoop dough and roll into 1-inch sized balls. Roll into the powdered sugar. Place 2 inches apart on the baking sheets. If dough seems too sticky, it can be refrigerated for 30 min - 1 hour. Warm dough seems to make puffier cookies.
  • Bake for 11-13 minutes. The centers should be set and just barely browned. Don't let cookies get too brown. Cool on cooling rack.

Notes

  • Make sure not to over cook these cookies. Once they just barely start to brown you want to pull them out of the oven. You don't want the pink to turn brown.
  • You could add chocolate chips to these. You could use dark chocolate, semi sweet chocolate, milk chocolate, or even white chocolate chips. Add in 1 cup to the cookie batter.
  • You can try this recipe with other cake mix flavors.
  • If you want more strawberry flavor, add 1 teaspoon of strawberry extract to the batter.
  • These strawberry cookies will last 2-3 days in an air tight container at room temperature or 3-4 days in the fridge.
