Cranberry Orange Bread

Cranberry Orange Bread is filled with the flavors of tart cranberries and juicy orange. This cranberry bread recipe is smothered with a sweet orange glaze. Cranberry Bread is perfect served as a winter breakfast or dessert with a cup of orange juice.

Ingredients

For Bread:

  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 cups all purpose flour plus 1 tablespoon to coat cranberries
  • 3/4 cup buttermilk
  • 5 tablespoons butter melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups cranberries fresh
  • 2 teaspoons orange zest

For Orange Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice

Instructions

  • Preheat the oven to 350 degrees F. Line a 9" x 5" loaf pan with parchment paper or cooking spray.
  • In a large bowl, whisk together granulated sugar, baking powder, baking soda, and flour.
  • Add in buttermilk, butter, egg, and vanilla.  Stir until combined.
  • In a separate small bowl, toss to coat the cranberries in 1 tablespoon of flour.
  • Add the cranberries and the orange zest into the batter and combine.  
  • Pour the batter into the prepared baking pan.
  • Bake for 60 minutes or until the bread is brown on top and a toothpick inserted comes out mostly clean, with only a few crumbs.
  • Make the glaze by stirring together the fresh squeezed orange juice and the powdered sugar. Start with one tablespoon and add more based on the consistency you desire.  Once the bread is completely cooled, top with the glaze.

Notes

  • Use frozen cranberries (don't thaw) instead of fresh. Treat them the same as the fresh cranberries for this recipe.
  • Add chopped nuts such as walnuts or pecans to the batter when you add in the cranberries and zest.
  • Cranberry Orange bread will last about 3 days in a tightly sealed container at room temperature.
