- 4 sweet potatoes skin on
- olive oil for coating, optional
Preheat the oven to 400 degrees Fahrenheit.
Line a baking sheet with parchment paper.
Clean the sweet potatoes gently and rinse well.
Poke sweet potatoes 4 or 5 times with a fork.
Coat sweet potatoes with oil if you are using it.
Place on baking sheet and bake for 45-60 minutes.
Remove from oven and allow to cool.
- Optional: Coat the sweet potatoes with a small amount of oil after poking the holes.
- Make sweet potatoes for meal prep. Bake up a big batch of sweet potatoes and eat them through the week.
- No need to wrap these sweet potatoes in aluminum foil.
