Baked Whole Sweet Potatoes

Baked Whole Sweet Potatoes are a delicious and healthy dish. Oven roasted sweet potatoes are so easy to make, just follow the recipe so that you can add more of this nutritious vegetable into your cooking.

Ingredients

  • 4 sweet potatoes skin on
  • olive oil for coating, optional

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Line a baking sheet with parchment paper.
  • Clean the sweet potatoes gently and rinse well.
  • Poke sweet potatoes 4 or 5 times with a fork.
  • Coat sweet potatoes with oil if you are using it.
  • Place on baking sheet and bake for 45-60 minutes.
  • Remove from oven and allow to cool.

Notes

  • Optional: Coat the sweet potatoes with a small amount of oil after poking the holes. 
  • Make sweet potatoes for meal prep. Bake up a big batch of sweet potatoes and eat them through the week.
  • No need to wrap these sweet potatoes in aluminum foil.
  • Sweet potatoes will last in the refrigerator in a tightly sealed container for 4-5 days.
