Almond Flour Chicken Tenders

These simple Gluten Free Chicken Strips are made with almond flour instead of regular flour, a few different herbs, and juicy chicken breast. Almond Flour Chicken Tenders are an easy way to make a quick and tasty dinner.

Ingredients

  • 1 pound chicken breasts
  • 1 cup almond flour
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1 large egg

Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment paper or spray a baking rack with cooking spray (makes them crisper)
  • Dry the chicken breasts and slice into strips.
  • Mix the almond flour, parsley, onion powder, garlic powder, dried oregano, salt, and pepper in a shallow bowl.
  • In a separate shallow bowl beat the egg with a fork.
  • With left hand, dip one piece of chicken into the egg, coating both sides. Transfer it to the almond mixture and with the other hand cover the chicken completely with an even coating. Set the strip onto either the prepared baking sheet or a baking rack. Repeat with all the chicken.
  • Cook for 10 minutes, flip the chicken tenders over and cook for an additional 10 minutes. Broil the chicken tenders for 2-3 minutes to brown them up.

Notes

  • If you check your chicken half way through cooking time and notice dry spots, spritz on a little cooking spray to the spots and continue cooking.
  • Add 1/2 a cup of finely grated parmesan cheese to the almond flour mixture.
  • Add some chipotle powder, or cayenne pepper to the almond flour mixture or just squeeze on a couple drops of sriracha or your favorite hot sauce to the cooked chicken tenders.
