Omelet in a Mug

- 2 eggs
- 1 tablespoon milk
- 2 tablespoons cheese shredded
- 4 grape tomatoes quartered
- 1-2 tablespoons cilantro torn up or minced
- 5 spinach leaves torn up
- 2 tablespoons avocado diced, optional
- 1 pinch sea salt
- freshly ground pepper to taste
Crack two eggs in a large microwave safe mug that has been oiled or greased (I like to use butter in mine). Beat the eggs with a fork.
Add in the milk and mix together with the fork.
Add in the cheese, tomatoes, cilantro, spinach, salt and pepper (just not the avocado, if using) into the mug and stir together.
Microwave for 30 seconds.
Stir the mixture to make sure it cooks evenly.
Microwave for an additional 60 seconds. If egg mixture still looks a little wet on top, microwave for 30 more seconds at a time until it is done. Be careful not to overcook or omelet will be dry and rubbery.
Remove carefully from the microwave, cup will be hot. Top with a little extra cheese and avocados.
- While the omelet is cooking, the eggs will rise. So keep an eye on it to make sure it doesn't overflow.
- The mug omelet will be really hot when it comes out of the microwave, so make sure to use pot holders or a towel to remove the cup.
- This omelet will stay good in an airtight container for up to 3-4 days.
