Ingredients

  • 1 1/2 quart unfiltered apple juice
  • 3 cinnamon sticks
  • 12 whole cloves
  • 1/4 teaspoon allspice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups spiced rum
  • whipped cream for topping

Instructions

  • In a saucepan, combine apple juice with the cinnamon sticks, whole cloves, and allspice.  Bring to a simmer for around 15 minutes.
  • Taste the apple cider, if you are happy with the level of spice, then you can strain out the cinnamon sticks and cloves with a slotted spoon or mesh strainer.  Add in vanilla extract.
  • Divide evenly into 6 mugs. Add 1/4 cup (or desired amount) of spiced rum to each and top with whipped cream.

Notes

  • Use a good quality unfiltered apple juice for best flavor.
  • If there is any leftover apple cider (before adding spiced rum or whipped cream), store it in the refrigerator for 7-10 days from the day the apple juice was opened.
