Apple Cinnamon Baked Oatmeal

- 3 large gala, honey crisp, or Granny Smith apples peel, core, chop into 1/2 inch pieces
- 2 cups old fashioned rolled oats
- 1/3 cup brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 tablespoons unsalted butter melted
- 1/2 cup walnuts chopped
- 1/2 cup raisins
Preheat the oven to 325°F. Nonstick cooking spray or butter a 9x9-inch baking pan.
Arrange the chopped apples in the bottom of the prepared baking dish. Set aside.
In a medium bowl, whisk together the oats, brown sugar, baking powder, cinnamon, and salt.
In a large liquid measuring cup or large bowl, whisk together the milk, eggs, and vanilla.
Add the dry ingredients into the wet ingredients. Add in the melted butter, the raisins, and half of the nuts. Stir to combine.
Pour the mixture into the baking dish over the apples. Sprinkle the remaining nuts on top. If you are making overnight oats, now is when you will cover the dish and pop it in the refrigerator.
Bake for 40-45 minutes, until the top is golden brown and set.
- Used different dried fruits: The raisins are optional, and you can even replace them with dried apricots, cherries, blueberries, cranberries, or even a little candied ginger!
- Replace the nuts: Walnuts are a classic option with apple, but crunchy pecans would taste great, too.
- Adjust the spices: Warm cinnamon is a perfect match for apples, but you can substitute apple pie spice for even more warm spices.
- Sweeten with maple syrup: To use a more natural sugar, try sweetening these oats with sweet maple syrup instead.
- Oatmeal will last 4-5 days in the refrigerator in an airtight container.
