Paletas de Mango (Mango Ice Pops)
Ice cold and bursting with tropical flavor, these mango popsicles are the absolute best summer treat for a hot day! You need less than a handful of simple ingredients and a little time for these paletas de mango, so let's get started!

- 2 1/2 cups diced mango 3-4 mangoes, amount will depend on size
- 1 large lime juiced
- 1 1/2 tablespoons granulated sugar omit if using mango nectar
- 1/4-1/2 cup water or mango nectar optional if blender needs it
Wash the mangoes. Cut through the mango as close to the pit as you can get on both sides. Try to get all of the flesh off of the mango pit. Then cut the mango halves into diagonal slices but not all the way through the skin. Cut them off the mango skin.
In a blender, add in the cut mango, lime juice, sugar and water if needed.
Pour the mixture into the popsicle molds, filling them most of the way but leaving a gap for expansion. Add the sticks.
Place in the freezer and freeze for 6 hours or overnight. If you would like less ice crystals in your ice pops, stir them about halfway through the freezing time.
Run the paleta mold under warm water to easily remove it from the mold being careful not to get water on the open end.
- Stir the popsicles halfway through the freezing time for best results.
- Use a silicone popsicle mold to make pushing the mango paletas out of the mold easier.
- If you don't have a blender handy, you can also use a food processor.
