Sandia Loca
The Sandia Loca recipe is a watermelon half stuffed with fresh fruits, Mexican candy, and drenched in Mexican flavors! This easy-to-make recipe is the ultimate and most fun way to eat watermelon.

- 1 watermelon
- 1/2 jicama peeled and cut into bite-size pieces
- 1 mango peeled and cut into bite-size pieces
- 1 fresh pineapple cut into bite-size pieces
- 1/2 cup chamoy
- 1 tablespoon tajin
- 1/2 lime juice only
- 12 small strawberries whole with tops cut off
- hot sauce optional, couple dashes
With a sharp knife cut the watermelon in half. Then cut a small slice off of the side of the watermelon you plan on resting it on to stabilize it.
Slice the watermelon flesh diagonally in both directions then use a large spoon to scoop out the watermelon chunks, will only need about 1/2 - 3/4 of the watermelon from one half. Cut them down to bite-sized pieces and set them aside. Save the other half of the watermelon and the 1/4 taken from the first half, for another use.
Pour any extra watermelon juice out of the empty watermelon.
In a large bowl, add in the cut up watermelon, jicama, mango, and most of the pineapple (set aside 8 chunks to use on skewers). Pour in the chamoy, lime juice, hot sauce, and tajin. Gently mix.
Add the fruit mixture into the cavity of the empty watermelon.
To make the fruit skewers, alternate threading the pineapple and strawberries onto 6-inch wooden skewers. Stick the fruit skewers into the rind of the watermelon.
Decorate with candy and enjoy!

- Canned pineapple. Use canned pineapple chunks if you cannot locate fresh pineapple.
- More seasoning. Add more Tajin and Chamoy to taste.
- Leftovers. Leftover watermelon with candy removed should last 3-5 days tightly wrapped in the refrigerator.
