How to Roast Pistachios in the Oven

  • Preheat the oven to 350°F.
  • Spread out the raw pistachios on a baking sheet in a single layer. If salting the nuts, spray lightly with non-aerosol cooking spray and sprinkle on salt.
  • Bake in the oven for 7-10 minutes, shaking the nuts halfway through cooking time. You can also flip your tray to cook the pistachios evenly.
  • Lay baked nuts on a lint-free clean towel. If you need the skins removed, gently rub the pistachios with the towel. 

How to Roast Pistachios in the Air Fryer

  • Preheat the air fryer to 330°F. Pour the raw pistachios into the air fryer, making sure they are in a single layer.
  • If you are salting the pistachios, lightly spray the pistachios in the air fryer basket if you are using a non-aerosol oil sprayer. If you only have aerosol oil, spray the nuts on a baking sheet before adding them to the air fryer (the aerosol spray will break down the air fryer coating). Then sprinkle on salt.
  • Air fry pistachios for 6-8 minutes, shaking the basket halfway through cooking time.
  • Pour the hot pistachios onto a spare baking sheet or bowl to cool down. Use a clean lint-free towel to rub off the skins if needed.

How to Roast Pistachios on the Stove

  • Put a small cast iron skillet or saute pan on medium heat. Add in ½ cup of pistachios. If salting pistachios, spray on a very light mist of oil and sprinkle in ⅛ teaspoon of salt.
  • Make sure to stir the pistachios almost constantly to keep them from burning.
  • Cook for 3-5 minutes until they are about 2 shades darker.
  • Place cooked nuts on a cool baking sheet or bowl to cool. Remove the skins with a lint-free towel if needed.

Notes

  • Follow your nose. As soon as you smell the pistachios, they're most likely done.
  • Stay close. Nuts can be overcooked really quickly so stay nearby and check them oftne.
  • Go slow. If you try to roast pistachios at too high of a temperature, they will burn quickly.
  • Taste as you go. Although the flavor and texture won't fully develop until the nuts cool, you can tell if you need to add additional salt or if the nuts are crispy enough.
  • Store pistachios in an airtight container in the fridge for 2-3 weeks or 1-2 weeks at room temperature.
