Weight Watchers Taco Soup

This Weight Watchers Taco Soup recipe is full of hearty flavors and spices to warm you up and keep you full! It tastes just like the chicken tortilla soup from your favorite Mexican restaurant but has only 4 WW points per serving. It's a great Weight Watchers-friendly meal for busy weeknights, too!

Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 4 clove garlic minced
  • 1 medium jalapeño seeded, finely chopped
  • 1 pound ground turkey 93% lean
  • 1 tablespoon chili powder
  • 1 tablespoon dry ranch seasoning
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups chicken broth low sodium
  • 29 ounce can diced tomatoes with chiles
  • 15 ounce can black beans drained and rinsed
  • 1 cup corn frozen

Instructions

  • In a large pot, add olive oil and put over medium heat. Once hot, add in diced onion and bell pepper, cook for 5-8 minutes until soft.
  • Add in minced garlic and jalapeno. Cook for 2 minutes.
  • Add ground turkey, breaking up the larger pieces, about 3-4 minutes.
  • Stir in chili powder, dry ranch seasoning, cumin, paprika, oregano, onion powder, salt, and pepper.
  • Pour in the broth and tomatoes. Bring up to a boil, then reduce the heat down to a simmer. Cook for 30 minutes.
  • Add in beans and frozen corn and cook for 5 more minutes. Remove from heat. Top with taco toppings and serve hot.

Notes

    • Soften your veggies first: Take the time to slowly soften your onion and peppers at the beginning, as that process draws out a ton of flavor.
    • Season as you go: For a delicious soup, taste the broth several times while cooking. Add salt as needed.
    • Taco soup in an airtight container and store in the fridge for 3-5 days.
